COWBOY MEATLOAF AND POTATO CASSEROLE

Ingredients:

°¾ cup chopped onion
°⅓ cup dried breadcrumbs
°1 pound lean ground beef
°¼ cup barbecue sauce of your choice
°2 teaspoons chilli powder
°¾ teaspoon of salt
°1 beaten egg
+Potatoes
°1 package butter flavored instant mashed potatoes
°⅔ cup evaporated milk
°1 tablespoon chopped parsley
°1 tablespoon of butter
°1 teaspoon garlic powder
°1 c cook and crumbl bacon
°¼ c crispy onions
°⅔ cup shredded Monterey Jack cheese

Instructions

FIRST STEP:
Heat oven to 375*, lightly spray a 9×9 baking dish
In a large bowl, combine the ground beef, onion, barbecue sauce, breadcrumbs, egg and spices.
SECOND STEP:
Press the meat mixture into the bottom of the sprayed dish
Baking uncovered about 20 min
THIRD STEP:
Removing to oven and drain fat
In another bowl, prepare the instant potatoes and mix with the evaporated milk, cheese, dried onions, butter and bacon
FOURTH STEP:
Spread the potato mixture over the meat and sprinkle with grated cheese, bacon and dried onions.
Place under broiler, 6 inches from broiler, and broil for 3 minutes.
FIFTH STEP:
Serve with an extra portion of barbecue sauce if desired.
