A very unusual and elegant soup that is perfect as a starter on the Festive days. This soup is very easy to make, healthy, so light and full of flavour, you will want to make it again. It’s a family favourite recipe and is always a hit with my guests! Please do try!
2 Sticks Celery, sliced
2 Garlic Cloves, crushed
1 Litre Vegetable stock (2 Vegetable Cubes)
500g/17.6oz Frozen Findus Swedish Sweet Peas (see note)
2 Large Heads of Romanian Lettuce (long lettuce) roughly chopped
1 Teaspoon Dried Parsley
1 Teaspoon Dried Tarragon
Juice of a Lemon
Salt & Pepper
Single Cream for garnish before serving.
Cut the lettuce in half and just use the dark green top piece.
Heat a little olive oil in a a large deep pan. Cook the onions and celery together, when the onions start to soften add the garlic and saute for just one minute. Add the vegetable stock, salt and pepper and simmer covered for 45 mins. Add the peas and continue cooking for 5 minutes, then add the lettuce and cook for 2 minutes until it wilts. Turn off the heat, add the herbs and lemon juice and puree in a blender.
Serve with a little cream on top and enjoy!
NOTE: It is important to use a dark green lettuce because that is what gives a vibrant green color to the soup. Being that lettuce has a bitter taste it is also important that you use sweet peas and not regular frozen peas
