A hearty traditional pie made with pumpkin, rice, tuna, leeks, capers and olives. This pie is a delight to cook and is one of Malta’s favourite foods
1 Onion, finely chopped
1 Large Leek, sliced
2 Garlic Cloves, minced
2 (160g/5.6oz) Tins Tuna, drained
Handful of Kalamata Olives, sliced
3 Tbls Capers
150g/5.3oz Raw Rice
1 (200g/7oz) Tin Diced Tomatoes
1 Tsp Dried Oregano
Fresh Mint and Basil, chopped
Salt & Pepper
Short Crust or Puff Pastry
To make the filling –
Cook the rice for just 10 minutes. Drain and rinse under cold water and set aside.
Cook the onions, leeks and garlic until the onions start to soften then add the cubed pumpkin and cook for a further 10 minutes. Add the diced tomatoes and cook for another 5 minutes. Turn off the heat and add the remaining ingredients with rice last and season with salt and pepper.
Leave the filling to cool completely before filling into your prepared pie dish with pastry. Cover filling with pastry and brush the top with beaten egg (egg wash).
Bake in oven 180C/350F until pastry is cooked and golden.
